The Royal Wedding is closing in!

What are you going to bake? A big wedding cake? Mini cakes? Cookies?

With so many of you throwing garden/street parties I thought I would share a few simple ideas you can re-create at your parties!

I also thought it might give you a bit of inspiration for the fantastic competition that Tate & Lyle are throwing – Let them Eat Cake.

I came across the competition through their fantastic Facebook group – We Love Baking. A group I am constantly on looking at pictures of new cakes!

Just go to the Facebook App – Let them eat cake – and submit a picture (or even just a drawing) of your idea for a Royal Wedding Cake and the winners cake will be displayed at Wellington Arch in London!

And if you are London between the 22nd-25th April, make sure you check out the full exhibition! I can’t wait to go and see all the amazing cakes, I guess it’s like my version of a Star Trek convention!?

Anyway onto the cake! Well, cookies. I also decided to go with a medium I don’t often use – Royal Icing.

Tate and Lyle certainly know how to make me smile with this cute box design!

Okay, first make your cookies using your usual sugar cookie recipe!

Cut out circles in varying sizes (small, medium and large) and bake!

While they are in the oven, make your Royal Icing!

Add 60ml of water to 500g of Royal Icing, and mix until you get the above consistency!

Transfer a small amount to two bowls and colour with red & blue food colouring. Then transfer the coloured icing to some food bags, snip a tiny corner from them and you are ready to pipe – no need to expensive piping bags!

Then add a little water to the remaining Royal Icing as you will dip your cookies in this.


Simply dip and stack…

And decorate to your own wedding inspired designs!
