With a chewy middle and a crunchy topping, these Pecan & Peanut Butter Brownies are the perfect indulgent treat!
You will need:
- 125g Butter
- 200g Milk Chocolate
- 225g Caster Sugar
- 2 Tsp Vanilla Essence
- 2 Eggs
- 150g Plain Flour
- 50g Chopped Pecans plus extra to decorate
- 200g Peanut Butter
- 3 Tbsp Milk
- 75g Icing Sugar
Preheat the oven to 180oC and melt the Butter and Chocolate together in a glass bowl over a saucepan of boiling water. Transfer the chocolate mixture to a large bowl and stir in the Sugar & Vanilla Essence. Next add the two eggs and mix until you have a thick gooey mixture.
Sift over the flour and fold in with a metal spoon, finally stir in the chopped pecans. Now transfer the mixture to a baking tray and bake in the centre of the oven for 25 mins.
Once cooled, you can make the peanut butter topping. Mix the peanut butter, icing sugar and milk in a bowl until you have a thick spreadable mixture and smooth over your brownies.
Cut into squares and place a single Pecan on top of each brownie for decoration – and you’re finished!
