This delicious chocolate sugar cookie recipe is simple, no spread and delicious! These fab dinosaur cutters and embossers make the most amazing detailed cookies with no effort at all!

You will need:

200g Caster Sugar

200g Unsalted Butter (room temp)

1 Egg (slightly Beaten)

100g Cocoa Powder

310g Plain Flour

1 Pot Royal Icing

Instructions (makes approx 9-10 dinosaurs):

To make the cookie dough, preheat your oven to 160 degrees (my oven is fan assisted so you may need higher to non fan ovens).

Mix together the caster sugar and unsalted butter, if your butter is too cold and firm you can actually grate it into the bowl so it comes to room temperature quickly.

Add the lightly beaten egg and mix until you have a thick batter consistency.

Add the cocoa powder and plain flour and mix until you have a thick stiff dough, you may need to finish the mixing by reading with your hands.

Roll out the cookie dough on a non stick mat, then cut out the dinosaurs, pushing down on the embossers to add the details. Transfer to a baking tray lined with greaseproof paper and bake for 8-10 minutes.

Remove from the oven and cool on a wire rack.

To add the amazing detail, open a pot of Royal Icing and add water to get it to a thin flood consistency, add to a disposable piping bag and snip off a small opening at the end.

Fill in the grooves made in the dinosaurs on your cookies with the royal icing and watch your cookies really come to life with amazing detail!

Now simply serve and enjoy!
